Clara Bostian's Peanut Brittle

Clara Bostian's Peanut Brittle
She died at the age of 89 in 1973 in Sunbury PA

Take
2 cups of white sugar
1 half cup of water
1/4 teaspoon cream of tartar
2 teaspoon of molasses
2 teaspoon butter
1/2 teaspoon salt
2 cups of salted peanuts *(raw peanuts)
2 teaspoon baking soda

Combine sugar, water and cream of tartar.
Cook to 280 degree (hard crack stage * this means
when you take a cold cup of water and the candy makes a
hard string in the water when you drop a bit into it)

Add peanuts and baking soda at once and mix quickly.
Pour on buttered cookie sheet and spread thin
with a spatula.
Working rapidly.
When cool , break into pieces.
